ACAI BOWL

An Acai bowl is exactly what I crave on hot days when I need something sweet.  The problem is, the big over sized bowls that you get from your local is usually filled with more bananas than most of us can easily digest and apple juice that has more than one ingredient on the packaging. 

So I decided to share with you my morning Acai bowl that is full of good fats, high in antioxidants and will keep your mind clear and energy thriving for the whole morning.  

 

  • 1 packet frozen Acai

  • 1/2 frozen peeled banana

  • 1/2 cup blueberries

  • 1/2 an avocado

  • 1 tbs MCT oil or coconut oil

  • 1/2 - 1 cup of coconut water - depending on the power of your blender, you will need more liquid for a slower blender, less for a high powered one.

  • Toppings of choice - goji berries, chia seeds, cacao nibs, bee pollen, blueberries, nuts or seeds

 

Add all ingredients except for the toppings into your blender and blitz until it creates a soft serve like consistency.  Add more water or coconut water if it's having trouble blending.  

Place into your favourite bowl and sprinkle with chosen toppings.  

 

I find this is enough for a pretty big serve, I share it with my daughter but you can pour what you don't eat into a cup and leave it in the fridge for an afternoon treat.
