Chia pudding is one of my favourite desserts to make. It's SO simple and when I serve it to dinner guests after a delicious meal they usually have no idea how healthy it is because of the rich, sweet taste.
This pudding is rich in magnesium, amazing if you've been working out or to help your body restore during a good nights sleep, the chia is a great source of fibre and are loaded with antioxidants and good quality protein. So finishing off a meal with these is not only satisfying but extremely good for your insides!
- 1 cup coconut milk
- 2 tablespoons raw cacao powder
- 1 tablespoon xylitol (or sweetener of your choice)
- 1 teaspoon vanilla bean paste
- 2 tablespoons chia seeds
Place the coconut milk, raw cacao powder, sweetener and vanilla paste into a blender or nutribullet and pulse for a few seconds until combined.
Add in the chia seeds and blend until the seeds are broken up, this makes for a smooth pudding instead of thick and crunchy.
Pour into serving cups or small bowls and let set in the fridge covered for at least an hour.
I love to top mind with extra tasty superfood goodness. Things like goji berries, cacao nibs, bee pollen and coconut are perfect sprinkled over the top just before serving.
