My little girl started school.
It seems I have a little human that now goes to Pre Prep. And this means I have to pack a lunchbox 2 days a week, so not something that I'm used to! We're more spontaneous with food, deciding in the moment what looks good in the fridge and whipping something up.
Add to this new challenge - RULES!
I discovered that most schools now don't allow nuts in children's lunch boxes because of the rise in allergies. Challenge accepted, I WILL find a way to replace the nuts in Bo's treats of bliss balls and home made bars.
If you do have a child with an allergy, substituting any nuts with sunflower or pumpkin seeds (preferably activated for easier digestion on little tummies) is a great idea. But in a quick rush of a bake off days before Bo started at her new school, my husband and I created these delicious Raw Lamington Bars.
