This recipe is actually something one of my beautiful mama soul sisters created and fed me one morning on our way to a yoga retreat in Byron Bay. I couldn't believe how good it was! The base and centre are like a dense ice-cream and the top is a crunchy rich chocolate dream.
Such a perfect little dessert option for you (and little people) or just a treat when your girls come over for a juice.

Base
1 cup cashew nuts
1 cup almonds
1/2 cup raw cacao powder
1/2 cup coconut cream
1/2 cup rice malt syrup
1/2 cup coconut oil
Bounty Filling
1 cup coconut cream
1/4 cup coconut oil - melted
2 cups shredded coconut
1/4 cup rice malt syrup
Topping
1 cup cacao butter - chopped
1/3 cup cacao powder
1/4 cup rice malt syrup
To make the base, you need to soak the cashew nuts and almonds in filtered water overnight.
Blend all the base ingredients in a high powered blender until it creates a smooth and creamy texture.
Pour this mixture into the base of a large tin lined with glad wrap then place in the freezer while you make the filling.
To make the filling, stir all ingredients in a large bowl until well combined. Take the base from the freezer and spread coconut mixture over the top evenly.
For the topping, heat all ingredients in a small saucepan over medium heat until the butter has melted and all has come together.
Pour over the coconut layer and set in the freezer for at least 2 hours.
Slice into bars or squares and store in the freezer until all eaten!
