CACAO MINI MUFFINS

These are nearly perfect for a tiny treat in the afternoon or (the way my husband likes them) crushed on top of your morning Green Smoothie Bowl.  There are lots of dates in there, but as this makes 24 muffins it's not an overdose on natural sugars at all.  

Super simple and freaking delicious, I hope you love these like my family does! 

  • 14 medjool dates - pitted

  • 1/2 cup coconut flour

  • 1 tsp bicarb soda

  • 2 tbs raw cacao powder

  • 1 ripe banana

  • 6 organic eggs

  • 1/2 cup water

 

Preheat your oven to 170 degrees. 

Place the pitted dates in a food processor and blend well until they are smooth.  

Add the coconut flour, bicarb soda, cacao powder, banana and blitz again until well combined. 

Crack the eggs in and add the water and blend well. 

Pour the mixture into lined mini muffin tins and bake for 14 minutes, or until a skewer comes out clean.  Let sit for ten minutes and serve.  

These can also be frozen in individual bags.
