Some more sweet goodness for you! I use coconut sugar in these cookies, I love this alternative to sugar as it's low GI and filled with health benefiting minerals such as zinc, iron and calcium. This makes it a much better choice over sugar in any recipe, plus it's caramel taste makes takes these cookies to the next level.

2 cups almond meal
1/2 tsp gluten free baking powder
1/4 cup coconut sugar
1 egg
3 tbs melted coconut oil
3 tbs maple syrup
1/4 cup desiccated coconut
8 medjool dates - pitted and roughly chopped
Pre heat oven to 170 degrees and line a tray with baking paper
Mix together almond meal, baking powder and coconut sugar.
Make a well in the centre and pour in coconut oil, maple syrup and egg.
Whisk wet ingredients into dry and then fold through coconut and medjool dates.
Roll tablespoon sized balls and place on tray.
Bake for 10-15 minutes, depending on how soft or crunchy you like them.
